making whoopie...

pies that it... geez get your mind out of the gutter.

I found the recipe for these Pumpkin Cookie Sandwiches... aka Whoopie Pies and HAD TO HAVE THEM!


pumpkin sandwich cookies
PUMPKIN COOKIE SANDWICHES
2 1/2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 1/2 cups sugar
1/2 cup butter softened
1 cup canned pumpkin
1 large egg
1 tsp vanilla
Prepared Vanilla Frosting 
Mini chocolate chips
Preheat oven to 350 degrees.
Combine flour, soda, baking powder, cinnamon, nutmeg, and salt.  In another bowl, beat sugar and butter.  Add pumpkin, egg, and vanilla to sugar mixture.  Gradually add flour mixture.  Use a ice cream scoop or melon baller to make your cookies uniform in size.  Drop onto cookie sheet covered in parchment paper.  Bake for 15 - 18 minutes.   Remove from baking sheet and cool completely.  Add frosting between two cookies and roll in mini chocolate chips.  Serve.  Makes 1 1/2 dozen sandwiches.  
Here is my version, not as pretty as above, but they were delicious!
